Pi Day


March 14th is "Pi Day" - as well as Albert Einstein's Birthday! I'm not a huge math fan, but I like to celebrate any occasion that calls for food, so I decided to make a strawberry pie with a chocolate shell crust. It turned out perfectly refreshing. Recipe was adapted from here. How I made it:

STRAWBERRY FILLING:

1 1/2 LBS HALVED STRAWBERRIES
1/2 LB MASHED STRAWBERRIES
3/4 CUP WHITE SUGAR
3 TBSP CORNSTARCH
Over medium high heat in a saucepan, I combined a 1/2 pound of mashed strawberries with white sugar, cornstarch and a 1/2 cup of water. I constantly mixed until the strawberries came to a boil, and continued to stir about 2-3 until the mixture thickened.

After pre-baking a pricked pie crust in the oven for 12 minutes at 375 degrees F, I melted a couple of ounces of bittersweet chocolate with whipping cream, and "painted" the melted chocolate onto the inside of the cooled crust. The chocolate adds a little something extra by satisfying my chocolate obsession and stopping the crust from becoming soggy. Best of both worlds!

After letting the chocolate layer set in the freezer for 10 minutes, I arranged the halved strawberries in the dish, covered with the mashed strawberry mixture, and let the pie cool in the refrigerator. 


The pie was ready just in time for tonight's dessert. So delicious! I love the color combination of the dark chocolate and the bright red strawberries. Can't wait to have another slice for breakfast tomorrow.

27 Week Bumpdate

BABY IS THE SIZE OF A HEAD OF CAULIFLOWER
DUE DATE: June 12th 

TOTAL WEIGHT GAIN: 20 lbs

HOW I’M FEELING: I'm feeling good this week. On Tuesday I went in for my Glucose test which wasn't as bad as I thought it'd be. The drink I had to drink tasted exactly like Hi-C fruit punch. My OB gave me the TdaP vaccine for tetanus, diphtheria and pertussis, which left my arm sore for a couple days. 

SLEEPING: I can only sleep for a maximum of eight hours now. I'm not sure why that is. 

MOVEMENT: Baby still moves all the time and I feel him moving further up above my belly button. 

FOOD CRAVINGS: I can't get enough of these...


BEST MOMENT OF THE WEEK: My two favorite moments of the week were on Monday when I was able to clean the whole house, put freshly laundered sheets on my bed and bought fresh flowers which made the house smell like spring, and on Tuesday when the weather was absolutely beautiful and the whole world felt like spring. 

LOOKING FORWARD TO: Spring, if you couldn't already guess.

WHAT I’M MISSING: Being able to sleep on my stomach. Can't wait until until the baby is born so I can sleep more comfortably. 

MESSAGE TO BABY Q: Baby we miss you and I can't wait to see you!! Hurry up in there so we can finally meet!

HOW MY BABY IS GROWING:

This week, your baby weighs almost 2 pounds (about the size of a head of cauliflower) and is about 14 1/2 inches long with her legs extended. She's sleeping and waking at regular intervals, opening and closing her eyes, and perhaps even sucking her fingers. With more brain tissue developing, your baby's brain is very active now. While her lungs are still immature, they would be capable of functioning — with a lot of medical help — if she were to be born now. Chalk up any tiny rhythmic movements you may be feeling to a case of baby hiccups, which may be common from now on. Each episode usually lasts only a few moments, and they don't bother her, so just relax and enjoy the tickle.

HOW MY LIFE IS CHANGING:

The second trimester is drawing to a close, but as your body gears up for the final lap, you may start noticing some new symptoms. Along with an aching back, for example, you may find that your leg muscles cramp up now and then. They're carrying extra weight, after all, and your expanding uterus is putting pressure on the veins that return blood from your legs to your heart as well as on the nerves leading from your trunk to your legs.


Unfortunately, the cramps may get worse as your pregnancy progresses. Leg cramps are more common at night but can also happen during the day. When a cramp strikes, stretching the calf muscle should give you some relief.

Straighten your leg and then gently flex your toes back toward your shin. Walking for a few minutes or massaging your calf sometimes helps, too.
It may be the furthest thing from your mind right now, but it's not too soon to think about family planning. You'll want to have made some decisions about postpartum birth control before your baby arrives. If you're considering a tubal ligation, be aware that most states require you to sign a consent form at least 30 days beforehand. So if you'd like the option of having the surgery during your postpartum hospital stay, don't wait too much longer to discuss it with your caregiver. (You can still change your mind later.)

Nutella Banana Bread

MY BANANA CRAVING & CHOCOLATE CRAVING:
TOGETHER AT LAST

INGREDIENTS:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs beaten
  • 2 1/3 cup mashed overripe bananas
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 3/4 cup Nutella spread

DIRECTIONS
  • Preheat oven to 350 degrees F. Lightly grease a 9x5 inch loaf pan
  • In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs, mashed bananas, cinnamon, nutmeg and vanilla until well blended. Stir banana mixture into flour mixture.
  • Mix one cup of batter with 3/4 cup Nutella. 
  • Pour banana mixture into prepared loaf pan. Top with Nutella mixture and swirl with a knife. 
  • Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Tea Time with Grandma Pear



Yesterday my mother and I went to a tea place in Westwood called Harmony Tea Room to check out potential venues for the baby shower. We shared some beautiful finger sandwiches, warm scones and fresh pastries. My mother ordered the chai tea and I ordered something called chocolate black tea - so yummy! We had a great afternoon together, the service was super relaxing. 

Good news: we loved the place so much that we just went ahead and booked for May 4th! Finding a place is such a relief. The shower will be for three hours with a preset menu, and we'll be bringing cake that my sister said she'll make, along with mimosas. My mother and I are so happy we finally settled on what we're doing for the shower. For a while we were going to host at the house, but it's much easier at a location where everything is already done for you and you basically just have to show up and look pretty! (my specialty)

26 Week Bumpdate

BABY IS THE SIZE OF A SCALLION

DUE DATE: June 12th

TOTAL WEIGHT GAIN: 19 lbs

HOW I'M FEELING: This week was a harder week for me. On Sunday I started feeling like I was getting a sore throat, and that ended up lasting a couple of days. Being sick just made me more tired than I already was. Then this morning, I woke up when the cat came into my room and my back was killing me. I must have slept wrong because I couldn't go back to sleep until I sat up straight on the couch and put on a heating pad on my back. Taking a warm bath also helped a lot, and I got to use my LUSH bubble bar, so it wasn't all bad.

Corrin Home for Spring Break!


On Friday Corrin came home to New Jersey for her spring break bearing gifts for her dear old sister! How sweet? She got me a couple things from one of my favorite places on earth, LUSH, & she bought Baby Q a glow-in-the-dark skeleton onesie, perfect for his first halloween! What a thoughtful sister I have!
